Baked Corn Fritters

INGREDIENTS

  • 2 cups organic sweet corn kernels

  • 1 cup brown rice flour

  • 1/4 cup chopped basil or cilantro

  • 2 scallions, finely chopped

  • 1 shallot, minced

  • 2 cloves of garlic, minced

  • 1/2 cup water

  • 2 Tbsp nutritional yeast flakes 1 tsp lemon juice

  • 1/2 tsp ground cumin

  • 1/2 tsp sea salt

  • 1/4 tsp baking powder

  • 3 to 4 Tbsp fine cornmeal

 

 

PREPARATION

  1. Preheat oven to 425 degrees F.

  2. Line baking sheet with oiled parchment paper.

  3. In a large bowl, combine brown rice flour, cornmeal, cumin, sea salt, baking powder, and yeast flakes, then stir in water.

  4. Add garlic, basil/cilantro, shallot, and corn. Mix well.

  5. Form into patties and place on baking sheet.

  6. Bake for 30 minutes or until golden brown, turning halfway.
