Sweet & Sour No "Beef" Stir Fry

Ingredients

  • 1 head raw broccoli, chopped

  • 1 medium size onion, chopped

  • Variety colors of sweet bell peppers, chopped

  • 1 tbsp garlic powder

  • ¼-1 tsp sea salt to taste

  • 2 tbsp olive oil

  • 2 tbsp sesame seeds

  • 3 celery stalks, diced

  • 1/4 cup cashews

  • Choice of veggie/soy "meat"

Sauce

  • 6 tbsp honey

  • 4 minced garlic cloves

  • 6 tsp water

  • 2 tsp arrowroot

  • 1 1/2 tbsp Bragg's Liquid Amino

  • 1 tbsp sesame oil

  • 1/2 tsp lemon

Sauce Instructions

  1. Add all sauce ingredients except the arrowroot + water. Bring to a simmer and stir until completely mixed.

  2. In a small bowl, completely dissolve arrowroot in water, then add to the mixture. Stir until sauce reaches a low boil again and cook until sauce thickens (about 2 minutes).

  3. Set sauce aside

Cooking Instructions

  1. Chop all vegetables in a medium sized bowl

  2. Heat wok or large frying pan on medium heat add oil ( A wok will yield the best results)

  3. Add choice of veggie/soy meat for approx 3-5 minutes or semi browned

  4. Add in all veggies and stir  until well mixed

  5. Add sesame seeds and cashews

  6. Drizzle in sauce and lightly stir for 1-2 minutes

  7. Cook for an additional 5 minutes until well blended.

*Top off on rice or noodles/low mien for a savory dish
