Grab and Go Breakfast Burrito

Ingredients:

  • Whole wheat tortilla wraps

  • 1 Tbsp onion powder

  • 1 Tbsp garlic powder

  • 1 tsp salt

  • 2 servings Tofu

  • 2Tbsp nutritional yeast

  • 2 Tbsp turmeric

  • 2Tbsp vegan butter

Veggie Add Ins:

  • 1/3 cup roasted sweet potato cubes

  • 8 strips roasted red pepper

  • 1 small tree broccoli, sautéed

  • Handful spinach, kale, other greens choice of veggie meat

Instructions:

  1. Preheat oven to 350 °F.

  2. In a frying pan on medium heat, add butter until melted and add crumbled tofu

  3. Add all seasoning ingredients to frying pan and combine with tofu thoroughly

  4. Add in all veggie add ins and sauté for 3-5 minutes

  5. Place whole wheat tortilla wraps on flat surface

  6. Scoop from frying pan and place tofu mixture in the middle of the wrap.

  7. Roll by taking one end of the tortilla wrap and use to pull mixture to one end

  8. Begin rolling tortilla until completely rolled, repeat steps for desired amount of wraps

  9. Once finished wrapping, place tortillas on a lined baking pan and bake in the oven for approx. 5-7 min until desired crispiness
