2 tablespoons flaxmeal
6 tablespoons water
1 cup whole-wheat flour
1 cup ground cornmeal
1/3 cup agave syrup
1 tbsp aluminum free baking powder
1 - 1 1/2 cup coconut milk
1/4 cup coconut oil
1 tsp salt
creamed corn (optional)
Preheat oven to 425 degrees F
Heat coconut oil for about 10 min on stovetop or in oven
Combine flaxmeal and water in a cup and mix until thickened and combined.
In a medium bowl combine flour, cornmeal, sugar, baking powder, and salt. Stir until well combined.
Add flaxmeal mixture, coconut milk, and hot coconut oil
Mix all ingredients together
Spray muffin pan with non stick spray
Portion mixture in pan
Place in oven and bake for 20 minutes
Use toothpick to test for readiness by sticking it in the middle of one muffin. If the toothpick comes out clean, remove pan from oven. If toothpick comes out moist leave in oven for additional 2-3 minutes or until toothpick comes out clean.
