2 cups organic sweet corn kernels
1 cup brown rice flour
1/4 cup chopped basil or cilantro
2 scallions, finely chopped
1 shallot, minced
2 cloves of garlic, minced
1/2 cup water
2 Tbsp nutritional yeast flakes 1 tsp lemon juice
1/2 tsp ground cumin
1/2 tsp sea salt
1/4 tsp baking powder
3 to 4 Tbsp fine cornmeal
Preheat oven to 425 degrees F.
Line baking sheet with oiled parchment paper.
In a large bowl, combine brown rice flour, cornmeal, cumin, sea salt, baking powder, and yeast flakes, then stir in water.
Add garlic, basil/cilantro, shallot, and corn. Mix well.
Form into patties and place on baking sheet.
Bake for 30 minutes or until golden brown, turning halfway.
